Happy World Vegan Day dear veggies! What a privilege it is to be part of such a conscious community. This morning, every social media platform is bursting with good vegan wishes and tasty plant-based treats!
It has been a busy weekend for sure, as most of us also celebrated Halloween yesterday eve. I was intrigued by the creative vegan candy produced by veggies all around the world, and proud to say that I indulged in my own little innovative delight. After revising a few raw vegan pumpkin smoothie recipes online, I was inspired to create one myself. This Raw Vegan Pumpkin Pie Smoothie is spicy, sweet and oh-so-creamy. It is high in good, natural carbohydrates, very nutritious and fiercely filling. It is also extremely quick and easy to prepare with the minimum ingredients that are probably already in your pantry.
For this recipe I used Vita Coco, which is now exclusively stocked in Woolworth’s stores countrywide. I opted for a litre bottle (R49,99) as it works out much more economical, and I am planning on making this smoothie more than once this week. You can also substitute the coconut water for almond milk if you wish.

- 1x cup raw butternut, cubed
- 1 – 2 cups Vita Coco Coconut Water
- 2x bananas (frozen works best)
- 1x apple
- 1x tablespoon mixed spice
- 1x tablespoon cinnamon
- Blend it all up and enjoy!
