I absolutely adore salads and I really can eat one (or even two) every day! There are just so many beautiful, raw ingredients to add to your greens to create a colourful, fresh rainbow on your plate. Salads never bore me, but sometimes I do crave a little dressing to spice them up. Balsamic vinegar and/or extra virgin olive oil can do, but it is not the healthiest option and it also takes away the garden-fresh taste of the ingredients. Having bought my OmniBlend V on Friday, I decided to try one of FullyRaw Kristina’s fully raw vegan salad dressings. I have been eyeing the video on YouTube for a while and pledged that it will be one of the first things I make when I get my power blender. This afternoon I fulfilled the task and opt for the fully raw tomato and ginger dressing. It is inexpensive, quick and easy to make and one batch almost filled my Consol jar to the brim. The outcome is a lovely thick and flavoursome tomato dressing – so beautifully rich that I was tempted to drink the whole batch straight from the jar. 100% healthy, 100% raw and 100% delicious! The only item I would add is a fresh chilly as I like things on the spicy side 😉 so I amended the recipe slightly to my taste.
I really do encourage you to try this recipe, trust me you won’t be disappointed and you’ll want to include salads into your meal plan every day!
- 4-5 large, ripe tomatoes cut in squares
- ¼ cup raw sesame seeds or raw tahini
- small thumb of ginger
- 1x cup diced celery
- 2x tablespoons freshly squeezed lemon juice
- 1x garlic clove
- 1x small chilly (optional)
- Wash all your ingredients and blend together in a high power blender until smooth.
- Transfer to a glass jar and keep it chilled in the fridge.
